Preparation instructions
Stovetop:
Heat enough oil in a deep skillet over medium-high heat so fillets can float. Heat oil to 375°F. Cut fillets into 1" wide strips and coat with flour. Dip fillets in milk or beaten egg, then coat in a fish fry mix or a mixture of 3/4 cup cornmeal and 1/4 cup flour. (Can also add salt, cayenne and garlic powder to taste to this mixture.)
Place one or two fillets in the pan and fry 4 - 5 minutes until golden.
Place fillets on a rack to drain.
